We’d like to share with you, our favourite and super easy Christmas recipes. Your family and friends will love them. Enjoy!
Magic Bars

1/2 cup butter
1 1/2 cups graham wafer crumbs
1 cup semi-sweet chocolate chips
1 cup butterscotch chips
1 cup shredded coconut
1 cup chopped walnuts, pecans or peanuts, your preference
1 (14oz)  sweetened condensed milk

Combine butter into graham wafers, pat into 9 by 13 inch pan.
Sprinkle chocolate chips, butterscotch chips, nuts, and coconut over crust. Pour sweetened condensed milk over everything. Bake at 350, for 25min. Or until golden brown. Let cool completely, then cut into squares.

Peanut Butter Crackles
Peanut Butter Crackles
1 1/2 cups flour
1 tsp. baking soda
1/8 tsp. Salt
1/2 cup butter
1/2 cup chunky peanut butter
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 egg
1 tsp. Vanilla
Granulated sugar
Chocolate candy stars

In small bowl, combine flour, baking soda, and salt. In large bowl beat butter and peanut butter until well blended. Beat in sugars until blended. Beat in egg and vanilla. Gradually beat in flour mixture until well mixed. Shape dough into I inch balls. Roll in sugar. Bake in ungreased cookie sheets, at 360 for 10 minutes or until lightly browned. Remove from oven and quickly press chocolate star firmly in the centre, cookie will crackle. Cool completely.

1 oz. orange juice
Sparkling white wine to fill the glass
In a Pitcher:
2 cups cranberry juice
1 cup orange juice
1 bottle sparkling white wine

Spring Market Success

Hosting our first ever Thistle Lane Spring Market this June  left us feeing inspired and encouraged. Together, with a very dedicated committee we managed to provide our visitors with a market filled with 17 vendors for a local shopping experience.

The country ambience of a farm house bed and breakfast and horse barn setting was the perfect place to display our merchandise. The day could not have been any nicer, the weather was fantastic, the food at the canteen was second to none, and the customers were greeted by the artisans and farmers themselves who were more than willing to show their gifts, talents and products.

The market hosted just over 300 people throughout the course of the day, with that being said, we will be looking into hosting future markets.

We are excited to announce that plans are already set into motion for our first ever Christmas in the Country Market. We look forward to sharing details on this event soon.

Pumpkin Cheesecake

Thistle Lane’s Layered Pumpkin Cheesecake

Ingredients:

Crust:

1 cup graham wafer crumbs,
1/3 butter
Mix crumbs and butter together. Press into 8 or 9 inch spring form pan. Bake at 350 F for 10 minutes.

Filling:

3 pkg cream cheese
3/4 cups sugar
3 eggs
3/4 cup pumpkin
1/2 tsp. Vanilla
3/4 tsp. Cinnamon
Dash of each: cloves, nutmeg and ginger

Mix together cream cheese, sugar vanilla and eggs. Divide mixture in half, too one half add pumpkin and spices.
Pour the plain batter over the crust, gently top with pumpkin batter.
Bake for approximately 50 minutes or until the centre is set.
Let cool completely!
Best taste for cheesecakes is the day after they are baked!

Top with either a drizzle of chocolate or caramel and add a dollop of whipping cream! The next day call a friend and make yourself a pot of coffee. Enjoy!

Thistle Lane Strawberry Cream Pie

At Thistle Lane, strawberry season is one of our most favourite times of the year! There is nothing more delicious than a fresh strawberry cream pie. This recipe is amazing and definitely the most popular for our family!

Berries

Ingredients:

  • 4 cups strawberries,
  • 1 pkg. strawberry glaze
  • 1 pkg. cream cheese
  • 1/2 cup icing sugar
  • 1/4 tsp cinnamon
  • 1 tsp vanilla
  • 1 cup heavy whipping cream
  • 1 (9 inch) baked pie crust

Directions:

Stir the strawberries with the glaze in a bowl and place in the refrigerator to chill. Stir the cream cheese, icing sugar cinnamon and vanilla in a bowl (if your cream cheese is cold warm up in microwave for easy mixing).
Beat whipping cream with electric mixer until thick and then add the cream cheese mixture to whipping cream; continue to mix. Pour the cream cheese mixture into baked pie crust and top with strawberry mixture. Chill for at least one hour before serving. Enjoy!
